Weekend Breakfast: Apple Pie Waffles
Here’s the thing; I love food. I’m not going to lie, I can pack away a meal like 350 pound defensive back in the NFL. Is that what they’re called? Defensive backs? Football isn’t my forte, food is. I digress. I get cravings all the time. You’d think I was pregnant all year. Maybe it’s because I realized the power of a craving during pregnancy that I now hold on to that special power. Just another mom super power: I crave, I eat, peace on Earth in our house is restored. One morning while making our newest favorite waffles, I wanted a new topping. I’ve done toasted coconut and almonds, sliced bananas and walnuts, strawberries and chocolate chips. I even … Continue reading

Apple Muffins
I kinda wish fall would last forever. Chilly weather (except here in Nor-Cal, it’s been in the 70s!), warm sweaters, multi-hued foliage, pumpkin anything, and apples. These muffins were a hit in our house. I pretty much can’t look at an apple anymore without imagining it in muffin form. They’re a cinch to pull together and the house smells a-mazing while they’re baking. Apple Muffins {Adapted from The Girl Who Ate Everything} Ingredients: 1 1 /2 cups sugar 2 eggs 1 cup oil 3 cups flour 1 teaspoon salt 1 teaspoon baking soda 1 teaspoon cinnamon 3 apples, peeled and diced (I pulse the apples in a food processor a couple of times) Brown sugar for topping (around 1/2 cup) … Continue reading

Weekend Breakfast: Buttermilk Waffles
I have my go-to waffle recipe that I have pretty much memorized by now. It’s quick and simple and I always have the items on hand. My family are also big fans of buttermilk pancakes. They’re J’s favorite so I always have buttermilk in the fridge. A person can only handle so many pancakes so I end up with extra buttermilk all the time. Not wanting to waste it, I hit up Pinterest to see which buttermilk recipes were hot at the moment. I took a test bite of the first waffle then pretty much ran into my room yelling at my husband “hurry up and wake up! I made new waffles and they’re hella good. Hurry!” Seriously. I’m kind … Continue reading

Baklawa Cheesecake
Let the record show, I hate working with fillo dough. I’ve been itching to try this recipe for years. Yes, years. But my aversion to fillo dough has kept me away. And what gives? Is it fillo or phyllo? Can we please stick with one spelling. It’s like rice crispy and rice krispie. Doughnut and donut. Or when Arabs greet each other, one kiss on the cheek or two? Okay now I’m annoyed. Moving on. If I was going to make baklawa cheesecake, I needed a really good reason to face down my fillo dough nemesis. Simply baking up an incredible dessert to eat all by my lonesome wasn’t going to cut it. So, I decided I would make … Continue reading

Nescafe Cake
A few months back, a craving hit for tiramisu. I knew I had lady fingers in the pantry so I figured all was well in the world. I looked up recipes and kept falling short on key ingredients. So I began to Google substitutions. I then began to Google substitutions of substitutions. I should have stopped there, but it was too late to turn back. As you can predict, it was the mother of all fails. I assumed it would be, but I thought perhaps I would have stumbled upon a great discovery through my experimentations. Nope. Moving on. Recently a recipe has been floating around Facebook that seemed quite similar to tiramisu. A faux tiramisu, if you will. Oh, … Continue reading

Red Velvet Cupcakes
When it comes to red velvet cupcakes, you either love ‘em or hate ‘em. I’m pretty sure if you’re of the latter, you’d like them a heck of a lot better having a homemade version. I could be wrong. If you decide you don’t like homemade red velvet cupcakes, package them up all pretty and give to your BFF. Magnolia’s Red Velvet Cake or Cupcakes {via Chaos in the Kitchen} 3 1/2 cups cake flour 3/4 cup (1 1/2 sticks) unsalted butter, softened 2 cups sugar 3 large eggs, at room temperature 6 tbsp red food coloring, for this recipe, I used 3 tbsp* 3 tablespoons unsweetened cocoa 1 1/2 teaspoons vanilla extract 1 1/2 teaspoons salt 1 1/2 cups buttermilk … Continue reading

Baby Beckoning Cinnamon Rolls
Note: This post was originally written on December 19th, prior to having the baby. My due date has come and gone and I’m left reading way too much into every ache and pain. Was that a contraction? No, too much stretching from my nesting projects. Was that a contraction? Nope, just an unappealing reaction to a salted caramel hot chocolate. Was that a contraction? No, no, no… just my mind and body playing tricks on me. I’ve been told it will happen when I least expect it. Considering I’ve been expecting it for the past 9 8 months, it is not an easy feat to just “stop thinking about it”. I decided I had done enough home nesting projects and it was … Continue reading

Oatmeal Cookies with A-Peel
I rarely meet a cookie I don’t like. Pair it with a tall glass of milk and it’s a goner for sure. When I made J chocolate chip cookies for her first day of school, I decided to whip up a batch of cookies for myself. Being a mama to a new kindergartner deserved to be celebrated too. I knew I wanted an oatmeal raisin cookie. My go to recipe is the one under the lid on our oatmeal, but this time I wanted to try something new. I cracked open my cookbooks and began my search. I came upon a version that called for dried cranberries and orange zest that sounded yummy so I went for it. Oatmeal Cookies with A-Peel {via … Continue reading

Halal Shaped Rice Crispy Treats
You say Rice Krispie, I say Rice Crispy. Same difference. Either way, they’re halal, delicious in all of their zero-nutritional-value glory, and I can never have just one two three four. Last year was the very first time I had ever made Rice Crispy/Krispie treats in my whole 28 (27 at the time) years of existence. Why I avoided the recipe for so long remains a mystery to me. It’s probably the easiest and quickest treat I’ve ever made. Snap, Crackle, and Pop are pure geniuses for coming up with the recipe. Ingredients: 6 cups of puffed rice cereal (Rice Krispies or the generic stuff. Doesn’t make a difference. The marshmallow is the star in this recipe.) 1 jar of Marshmallow … Continue reading

Simple Chocolate Sheet Cake
Cake recipes usually scare me. Give me a cookie recipe and I’ll make an awesome batch that’s gone before the oven has cooled. But cake, eh, not so much. So I must have been slightly crazy when I decided to make an entire sheet of cake to take for an iftar, Ramadan dinner, this past Ramadan. Real crazy because I would be making it for the first time just hours before dinner. It’s usually not a good idea to attempt a new recipe just before any kind of event you plan on serving the dish at. But we’ve already confirmed that Crazy and I go hand in hand sometimes. I read through the entire recipe to make sure I had … Continue reading
